CREAMY AVOCADO DRESSING

Avocados - super nutrient dense, they’re amazing for skin health, cardiovascular health and the immune system. They’re rich in healthy essential fatty acids, all the potassium and B vitamins and they’re also packed with folate! How good! Pair them with some other green friends, like alkalising fresh herbs and baby spinach and you’ve got yourself a next-level-healthy addition to any meal. This is my creamy avocado dressing that has a mayo-like consistency and goes with pretty much anything... Raw natural goodness at its best !’ve made this one for Clarins and their #takecare initiative. Serve it with any kind of salad or as a condiment with seafood or chicken.
INGREDIENTS
- 2 ripe avocados 
- 2 limes, juice and zest 
- 2 tbsp extra virgin olive oil 
- 1/4 cup room temperature water 
- 1 tbsp dijon mustard 
- Handful of baby spinach leaves 
- 1/2 cup soft herbs [parsley, coriander, mint or dill] 
- 2 shallots, roughly chopped 
- Salt and pepper 
METHOD
Place all ingredients into a food processor or blender. Blend until smooth and creamy, adding a little extra water if necessary. Season to taste with salt and pepper. Serve as the perfect dressing to a simple salad, coleslaw, grilled meat or Mexican food.
