GREEN VEGGIE FRITTERS

INGREDIENTS

  • 2 free-range eggs

  • 1/3 cup full cream milk or preferred milk

  • 1/2 cup wholemeal self-raising flour

  • 1 tsp garlic powder

  • 1/2 cup grated parmesan cheese, optional

  • 1 medium zucchini, grated

  • 2 cups English spinach, finely chopped

  • 1 brown onion, finely sliced

  • 1/2 cup peas, or green beans, roughly chopped

  • Salt and pepper

  • 1/4 cup grapeseed oil for frying

  • 2 ripe avocados, diced

  • 1 lemon

  • 200g smoked salmon, optional

  • Fresh herbs to serve, optional

METHOD

In a large bowl, whisk together eggs, milk, flour and garlic powder to create a smooth batter.

Add parmesan cheese and vegetables to the bowl. Mix together well and season with salt and pepper. Allow mixture to stand for 5 minutes.

Heat oil in a large frypan over medium heat. Use a measuring cup to ladle fritter batter into hot oil. Fry fritters for 3-4 minutes each side. Remove fritters from pan and drain on paper towel. 

Place avocado and lemon juice into a bowl and use a fork to lightly mash. Season to taste with salt and pepper. 

Serve warm fritters with smoked salmon and smashed avocado. Garnish with fresh herbs.
