WATERMELON CARPACCIO WITH GOATS CHEESE + ORANGE

  • 300g watermelon, green skin removed
  • 1 orange, segmented, juice reserved
  • 1/2 dragonfruit, finely sliced
  • 1/2 cup wild rocket, roughly chopped 
  • 50g hard goats cheese, shaved
  • 3tbs extra virgin olive oil
  • 2 tbs apple cider vinegar
  • Salt and pepper 
  • 3 tbs roasted pistachios, roughly chopped 
  • Edible flowers
  1. Arrange watermelon on plate. Top with orange segments, rocket and goats cheese. 
  2. Mix orange juice, olive oil, vinegar together and season to taste with salt and pepper. 
  3. Sprinkle dressing over fruit. Top with pistachios and flowers.
  4. Serve as an appetiser or palette cleanser.
