DATE, COCONUT + DARK CHOCOLATE RUM BALLS

MAKES 30 RUM BALLS

INGREDIENTS

  • 1 cup roasted almonds

  • 2 cups dried pitted dates

  • 2 cups desiccated coconut

  • 150g dark chocolate, roughly chopped

  • 1/3 cup coconut oil

  • 2 tbsp dark rum 

  • 1 tbsp water, room temperature

  • Pinch salt

  • 2 cups shredded coconut, for rolling

METHOD

Place almonds, dates and coconut into a food processor. Blend into a stiff paste. Melt together chocolate and coconut oil. Add to date mixture. Add rum, water and salt. Combine well. Roll tablespoon-sized portions into balls and coat evenly in shredded coconut.  Store in the refrigerator until ready to serve.
