Butter Chicken + Brown Rice Risotto

  • 500g chicken thighs
  • 1 onion, diced
  • 1 small sweet potato, peeled and chopped 
  • 2 cloves garlic, crushed
  • 1 tbs fresh ginger, finely diced
  • 1 tin tomatoes 
  • 2/3 cup red curry paste 
  • 2 tbs garam masala 
  • 1 cup chicken stock
  • 3/4 cup brown rice, rinsed
  • 350ml coconut milk
  1. Place all ingredients into slow cooker and mix well. 
  2. Turn slow cooker on and set for 4 hours, stirring well halfway through.
  3. Serve in a bowl with natural yoghurt, fresh coriander and tomato.
